Ingredients

  • 12 dried figs roughly chopped
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup tahini
  • 1 tsp vanilla extract
  • 1 tbsp cacao
  • 1 cup activated buckwheat
  • 1/2 cup desiccated coconut plus a little for garnish
  • 1 pinch salt
  • sesame seeds for garnish

Method

  1. In a small bowl, soak the chopped figs in warm water to soften them for about 10 minutes.
  2. Combine tahini, coconut oil, maple syrup, vanilla and cacao in a small saucepan on low heat. Continue to stir until all of the ingredients have formed a smooth runny liquid.
  3. Blend or mash the figs with a fork until they form a paste and add them to a bowl with the buckwheat, coconut and a pinch of salt. Add the cacao liquid and stir well to combine.
  4. Line a loaf tin with baking paper and press the mixture firmly into the tin. Sprinkle with sesame seeds and coconut
Set in the fridge for 1-2 hours.
  5. Cut into small bars. Enjoy
