French toast with 3 seed berry jam and yoghurt

Ingredients
  

3 seed berry jam
  • 2 cups mixed berries fresh or frozen
  • 1 tbsp chia seeds
  • 1 tbsp flax seed
  • 1 tbsp hemp seed
  • 1 tbsp maple syrup
  • 1/3 cup water
French toast
  • 5 slices sourdough bread (or whatever bread you have) day-old bread works best, but fresh is fine too
  • 3 eggs whisked
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup milk of choice or pouring cream
  • 1 TBSP unsalted butter, ghee or coconut oil to fry
whipped ricotta
  • 1 cup ricotta
  • 1 TBSP honey omit under 12 months
optional extras
  • 2 tsp finely chopped mint
  • 2 ripe peaches, sliced in half

Method
 

3 seed berry jam
  1. In a small saucepan, simmer all of the ingredients on very low stirring regularly for about 5 to 10 minutes. The fruit will soften and a nice jam-like consistency will form.
  2. Remove from the heat and blend. Store in a jar in the fridge for up to a week.

  1. In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract until well combined.
  2. Heat a frying pan over medium heat and add the butter, ghee or coconut oil
  3. Dip each slice of bread into the egg mixture, ensuring both sides are fully coated. Gently shake off excess egg.
  4. Place the coated bread slices onto the hot frying pan. Cook for 2-3 minutes per side, or until golden brown and slightly crispy on the outside. Be sure to keep the heat moderate to prevent burning.
  5. Remove from the pan and let the French toast cool slightly before serving. serve with honey ricotta, yoghurt, berry jam or peaches and mint.
honey ricotta
  1. In a small bowl or blender, mix the ricotta cheese and honey until smooth. If you prefer a thinner consistency, you can add a splash of milk or a dollop of yogurt.
  2. Serve the honey ricotta alongside the French toast for dipping.
