3 seed berry jam
- In a small saucepan, simmer all of the ingredients on very low stirring regularly for about 5 to 10 minutes. The fruit will soften and a nice jam-like consistency will form.
- Remove from the heat and blend. Store in a jar in the fridge for up to a week.
french toast
- In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract until well combined.
- Heat a frying pan over medium heat and add the butter, ghee or coconut oil
- Dip each slice of bread into the egg mixture, ensuring both sides are fully coated. Gently shake off excess egg.
- Place the coated bread slices onto the hot frying pan. Cook for 2-3 minutes per side, or until golden brown and slightly crispy on the outside. Be sure to keep the heat moderate to prevent burning.
- Remove from the pan and let the French toast cool slightly before serving. serve with honey ricotta, yoghurt, berry jam or peaches and mint.
honey ricotta
- In a small bowl or blender, mix the ricotta cheese and honey until smooth. If you prefer a thinner consistency, you can add a splash of milk or a dollop of yogurt.
- Serve the honey ricotta alongside the French toast for dipping.
