Many store bought mayo’s contain seed oils which can be inflammatory, especially for our little people. There are some great options to purchase these days, like the Undivided Food Co Mayo! However, its also really easy to make your own. This one is made with avocado oil, a delicious healthy fat – but can be subbed for olive oil if you prefer.
- 1 egg yolk
- 1 TBSP lemon juice
- 1 TBSP water
- 1/4 tsp salt
- 1 pinch pepper
- 150 ml avocado oil can sub for olive oil
Separate the egg yolk from the white and add the egg yolk to a bowl with the lemon juice, water, salt and pepper. Blend with a hand mixer until smooth
Slowly begin adding the avocado oil while blending until the oil has emulsified and is thickening
Spoon the mayonnaise until a jar to store in the fridge

* You can serve this mayonnaise as is or you could even mix through some sauerkraut brine/finely chopped sauerkraut when serving for a probiotic boost!

we would recommend avoiding this one in pregnancy as the egg is raw. you can purchase store bought though because they are pasteurised :)
